I have seen similar technique before. When under a mount you just eye gouge the opponent. I have always wondered what prevents the guy on top grabbing ears and inserting thumbs into the eye sockets of the guy below. Hell, he could also commit a hand stand (or thumb-in-the-eye stand) and thus prevent all the attacks to the testis area.

Also sticking your fingers into hobo's or junkie's mouth sounds like a good idea...

It's called capturing the inititative. If you stap yourself with his knife, you are no longer on the defensive but rather on the offensive thus putting him on the defesnsive. If you put him on the defensive then he is reacting to your movements, and eventually he will fall far enough behind you tactically that you will then be able to attack him.
