Snap kicks to the knee hurt like hell and can tear all three ligaments if properly executed...
Yeah, they "can", but they probably won't. I mean, if someone hits you really hard at the base of the skull where the spine enters, you theoretically "can" get your spine dislocated and die, but it probably won't happen.
If you got into a fight with someone and snap kicked his kneecap probably nothing would happen even if it were a good snap kick. Maybe if you had really heavy boots and the person's knee was locked rather than flexed you might cause some biomechanical injury, but it's a hail mary more than anything else.
The problem with a lot of martial arts instruction these days is that techniques are taught like recepies. "If you do this, this WILL happen." But that's just not how the world works. It's more a question of odds and probabilities and a wise man wouldn't stack all his chips on being able to cause a cripping or incapacitating injury in anything but a totally one-sided situation. (Such as a deliberate break after you've already succeeded in applying a completed submission hold on someone.)

You don't have to tell me about stupid martial art teachers, one of the worst has his facility a few block from my house. Who in there right mind would snap kick to the front? I would hit them in the side, because that dramatically increases the chances of a serious injury. My dad has a Black Belt in Judo and is a former police trainer and self defense/ Judo teacher and knows a fair bit of Shotokan, and he has taught me some basics. I can and have successfuly thrown people across the room because they were dumb enough to try to punch me in the face. I also have learned some basic Aikido, the art of pressure points, and have appllied some knowledge of Judo to Ju Jitsu and can snap someones elbow with a single throw. I was the one that the bullies came after 'cause I was a fat dude. I had to learn basic self defense.
