If you like shitty sounding old school east coast beats that make your ears wanna bleed and an annoying voice and flow from the vocalist Wu-Tang, GangStarr, any of the solos from Wu, Rakim, etc.
If you want good sounding classic westcoast shit, get some 2Pac, Dre, Snoop, NWA, Eazy-E, Kurupt, Daz, Dogg Pound, Yukmouth, Xzibit, WC, Ice Cube, Warren G, etc.
If you just want new stuff that just sounds good, G-Unit, any of their solos, Lil Jon, Lil Scrappy, Shyne, Ja Rule (his new song is good), YoungBloodz, Nelly, etc.
Some random ones I don't know where to put are Tech N9ne, DMX, Outkast and Do Or Die.
And the best rappers ever, Bone Thugs-N-Harmony with all their solo CDs.

Surprised neither has been mentioned yet (unless I just missed it), but personally my two favourite hip-hop artists are A Tribe Called Quest and De La Soul. Roots Manuva and The Nextmen are also good, from the 1 album respectively I've heard from them, and if you don't mind people rapping in French, I'd recommend Shurikn. Finally, another interesting take on the genre is the concept album by Dan the Automator, 'Handsome Boy Modelling School' (unless it was a concept group set up by him - I was never sure).
I'd second (third? Fourth?) previous mentions of Jurassic 5, Beastie Boys, Gangstarr and Blackalicious.
