Hahahahahaha good lord you have to get into grappling range to bite. Oh and make sure you understand the word gouge because, you are using terms interchangeably and they are not.

Yes, to gouge you need to be in grappling range as well.

Just curious, is this in the context of a confined space scenario? You said that Wing Chun has it's place at an "extremly close range." So if you were trying to fight multiple opponents with Wing Chun, you would be at a close range. If the idea is to not let them flank you, how does this help?

Also, the attacks tend to be more direct and aimed at finishing the fight quickly where as in bjj you generaly have to take multiple steps to be able to finish the fight by first having to get a hold of them, take them down, and manuver to submit or strike. Also it is too easy to stick your fingers in someones eyes or bite when grappling.

We set scene in the parking lot. BJJ Joe has Wing-Chun Mike mounted and is punching his lights out. Mike's boys are too busy getting their asses handed to them by BJJ Joe's boys to kick him off. Wing-Chun Mike: EYEGOUGES!!!

Mike thrusts his hands into the air, his dirty fingernails ready to pierce Joe's puny eyeballs. But Joe merely tilts his head back confusedly, watching Mike's fingers twitch in front of him while his face contorts in ecstasy. Realizing what Mike is trying to do, he swats his hands away and digs his own finger knuckle-deep into Mike's eyesocket. Because Mike's head is pinned to floor, Joe is able to stick his finger in REALLY far.

Wing-Chun Mike: GAHHHH!!!! SPORT FIGHTERS AREN'T ALLOWED TO DO THAT!!!

While Mike is busy screaming, BJJ Joe latches on to his extended arm and spins around for a vicious armbar. He cranks the lock full power and hyperextends Mike's elbow in a matter of seconds. After Joe gets bored counting the pops coming from Mike's arm, he releases his hold on the mangled limb and stands above the whimpering Wing Chun exponent.

Gazing into Mike's single unblinded eye, BJJ Joe can tell that he is praying for mercy. But that's not what's on Joe's menu tonight.

BJJ JOE: You worthless shitburger. Do you seriously think I'm not going to consummate my dominance over you?

BJJ Joe fiercly lifts Mike up by his lapel.

BJJ JOE: I'm going to make hate to you. Right here, right now.

... Ohhhhhhhh, I'm going to make hate to you so hard that your kinfolk back in Africa will feel it.

It takes very little to no grappling skill to bite or gouge eyes. It is not a substitute for grappling but is a good reason to avoid it.
