Hm, when I went to college in Boston they had a BJJ club(well, MMA but it was mostly BJJ stuff) and had guest instructors come in whenever they could to get a little better instruction in.
Other than that, have patience. It's likely there's going to be new people who aren't athletic so it will take them time to pick stuff up. You also have to watch how much you push people and show/drill in relation to skill level.
This is assuming you want the club to be remotely successful rather than have people to roll with.
