I watched the first and third video. What I noticed is that bottom guy has to destroy top guy's posture to make this work. The more skilled your opponent, the harder this will be to accomplish.
If someone locks their legs that high on my back, I know I have to posture up or hit combat base immediately or I will be broken down. How high his legs are on my torso and how far off to the side he is dictates my response.
In the last video you can see at approximately 1:13 how he uses his elbows to bend outward the inside of top guy's elbows and break his posture enough to link arms behind his feet. In this video, this is the final step in achieving the position necessary to perform the submission. -
