could you tell us more about the one-step sparring they do at Wu's. To compare this is what I think is generally done

Yes, they do compete in some tournaments. Like the Master Cup, and the BC Taekwondo Championship. Mostly just local tournaments. But usually they compete in patterns and sparring. They dont win all the time though.
As for the one step sparring, the one shown on the video is a little like whats taught at Wu's TKD. Its dont by only one person, no attacker needed. Its just one person doing the defensive movements. Thats it. Sorry for the confusion, I call it one-step sparring because its how they call it.
What's done in the video does resemble a bit of what their "self defence" techniques. -
