It really depends on which Zombies we're talking about. Night of the Living Dead, Walking Dead etc zombies are slow moving and die pretty easily once the brain is impacted.
Return of the living dead zombies were fast and could use tools. Worst of all the zombies from resident evil were intense. They were fast and pretty resourceful.
Military training, weapons training, jiu jitsu ( enough to get off of your back if you fall down or trip), some striking art and bear grylls style survival skills. Make a walking dead style martial art for zombie survival. people would pay for it lol -

Man, what a prophet I was.
http://www.dordnation.com/store.htm
The first official Zombie-related Martial Arts system, RZMA (Reverse Zombification Martial Arts)! I even managed to snag a preview of the manual:
---
What is "Reverse Zombification"?
It's exactly what it sounds like! The process of zombification is creating a zombie. You take a normal dead body, or someone who has been infected by bite/scratch/blood/spit/other unpleasant bodily fluids too gruesome to think about, and through the magical process of zombification, you have created a Zombie.
Reverse zombification then is the process of making someone NOT a zombie. Now we can't undo months of rotting flesh and return a person back to their former self (yet). Therefore, by the process of elimination (and I mean that literally), reverse zombification is the act of turning a zombie BACK into a good ol' fashioned dead body.
It goes without saying that guns are an effective method of dealing with zombies, even though I just said it. Therefore, I will pass over the art of Head Shots (to be covered in future manuals). The way I see it, there are two branches of combat left. Armed, be it with a knife, bat, sword, newspaper, stick of butter, supple baby distraction, whatever. Then, you have unarmed. Which is where zombies eat off your arms because you don't have a weapon, you dummy.

Unfortunately the remainder of this SUPER SECRET document is available only to DordNation members. But I thought it was pretty pertinent to this thread. -
