I usually wait for people to roll away from me and then latch onto their back like a spider (i.e. arms around neck, hooks in). Even though I have a tough time sinking in chokes or locks it still makes my opponent panic.
The short answer is that to take someone's back they need to make a huge mistake; at least that's what's happened when someone has taken my back. -
