Rob Roy, though they overplay the heaviness of the Scottish Broad Sword, is a very good depiction of swordplay. Kingdom of Heaven (though the longsword was not in common use during that period) has a decent training scene somewhat inspired by actual manuals. Braveheart was also fairly realistic as Hollywood goes. The fencing match in Kenneth Brannagh's Hamlet was good too, IIRC.
