you'd only be able to strike to padded areas if they did that (with the stick so your empty hand tech would suffer... if they did it without pads then expect bloddy fights.

The Dog Brothers tried to get UFC to run a demo event for them. They got turned down. The have the rejection notice on their website. For reference, the Dog Brothers do MMA action, but with sticks thrown in. No protective gear, just skill, muscles, sweat, and a lot of pain. They use mostly FMA technqiues, but also work in Muay Thai and BJJ when they can.
As for FMA in MMA, empty hand is really secondary for FMA stylists. To go into a MMA match without a weapon is like a BJJ going to a match where he isn't allowed to grapple. Yeah, we can try to fight it out with stand-up strikes, but our primary techniques are with weapons.
As for locks and stuff, what doesn't work empty handed works incredibly well when you have a weapon to add leverage. The same wrist lock that your weak grandma could power out of becomes really painful when executed with a hard object such as a stick, knife hilt, or even a pencil.
Besides, a smart FMA stylist will whack his opponent several times before going into grappling.
