I think marcusdbrutus has a winner, it was pre-1993 though.

Have any of these post 1993 grapplers tried taking on Death in any weight class?

Yeah - Nog. He kicked death in the face and armbarred him when he was a kid and got run over by a truck.

He stayed in his coma extra long just to punish death for his bullshit.

After armbarring him for the final time he woke up and started training for real.

We have pictures of Hercules and Death, is there any evidence of the Nog and Death fight?

Find a picture of Nog during his coma and then him waking up. Know that scar on his back? You guessed it, it's just a stain caused by Death's tears - he begged and cried for the armbars to stop. They didn't stop.

Personally, I think that Antonio Inoki is the best grappler that ever lived, all you have to do is watch his pro wrestling matches, or his fights against other martial artists and you can clearly tell he is so far ahead of everybody. Also, check out his video on YouTube of him rollin with Wallid Ismail and Allen Goes, those two guys are giving it their all against him, and Antonio just toys with them.
"Best" is hard to judge. Different eras, etc.

To me, these guys all deserve huge accolades:

    Masahiko Kimura

    Carlson Gracie

    Ad Santel

    Mitsuyo Maeda

    Alexander Karelin

And no, not just because marcus is a Maritimer like me.
