Yup. I was there.
But my mission was probably different than your uncles. I had heard that my long lost brother (I was adopted) Sakura was training these men in the martial arts. I infiltrated thier lair and managed to finally face him. I think I remember your uncle. He was one of the guys who didn't want to recruit me. He wore a hawaiian shirt and sunglasses at night, right? -

Mercenary simply means you are paid to fight for other than your own country. Most mercenaries are just former military personnel who hire out their services to foreign or private militaries.
There was a lot of this sort of work around in the late 70s and early 80s.
While there are non government organizations where you could get the necessary training (Blackwater comes to mind), I'm not aware of any "mercenary schools".
I think your uncle is probably stretching it a bit, especially if he claims he was trained as a merceneary in Chicago by some mysterious Asian man and his son. You could not effectively conduct combat training in the middle of Chicago. He may have studied MA in that manner, but that would have had nothing to do with being a mercenary. -
