Actually, it's something I wondered about myself before I started fighting. And yes, if you have a big long nose it tends to get remodeled a little over the years. I work a lot of head movement (for that reason) so it's not AS bad for me. But I did have a bigger nose before I started boxing.
That said, if you see a good doctor after every break you'll be fine. The cartilage won't look the same and you might have a slight bump in the bone, but when they reset it your airways will stay nice and open.
So as long as you see a doctor you can fight all you want. If that was your plan.
