I would definitely just lay off until everything heals up. It won't take long.
Especially with the tattoo. They're expensive and permanent, and it is very possible to **** them up if you don't care for them properly. Grappling with fresh tats = no.
I would think your ears would be fine if you wore headgear - for striking. But I'd pass on the grappling until everything healed.
I would go with plan B and work on conditioning until then. -

The ear piercing may be a bit uncomfortable, but with the tat, you should be fine.
I got a tattoo in the morning, and that night i was training.
Mine wasn't very painful, just on the upper arm/shoulder, i think if yours is causing you some discomfort, put some lotion or vaseline on it, wrap it in plastic wrap, and you should be all set.
Also, Lubriderm is your friend, for your tat. Apply it liberally.

The tatoo does not give me any discomfort whatsoever. It is very simple. I've put hand lotion on it every once in a while and it is healing well. I figure I could, as you said, simply bandage it and roll without discomfort.
The ears are what worries me, so ill let things cool off training for a bit.

Just keep your headgear clean. I don't even wear mine anymore, they are my pair from freshman year of wrestling, and frankly, despite being made of hard plastic, when they get wet with sweat they make my head smell like a butt-oven. So wash em with your ****, I'd suggest.
