Style: San shou--
well its not like san shou guys don't train for elbows and knees, its just not allowed in competition. So I suppose they could use them, just not as proficiently as the muay thai guys. Actually, a friend of mine took gold at Canadian nationals like two years ago scoring with front kicks he wasn't to good with throws. So, its not like all san shou guys are good at throws.

Style: Striking/Grappling/Poking--
I have trained a lot in Muay Thai, but not san shou, though I have sparred with many san shou fighters. Muay thai awesome, but I think because of how much kicks are used, it might not be as suited for MMA as san shou. In fact, in MMA sparring, I find I can't kick as much unless the opponent really wants to bang, otherwise: bam! takedown.
I agree with Omega in that the san shou fighters generally have better hands. Possibly because the likelihood of getting taken down makes them sit lower in their stance and punch more.

They fuckin better be good at takedowns. That **** might fly up in canada, but at the last sanshou tournament I was at here in the states, half of the fighters had mostly wrestling and/or mma experience. They also allowed knees to the body. Not to the head though, I got in trouble for that while getting the clinch trying to fight off the throws.
