Hey, quick question, does anyone know something specific about GSP's workouts? I've looked around a bit online with no luck.

It's been posted on here before, though I have no idea where. Check the archives. I recall it being extraordinarily normal.

Look on youtube or dailymotion for UFC All Access. He still does the same workout but he also works out with Jackson doing full out MMA. It's essentially doing BJJ, Wrestling, Boxing, Kickboxing separate (think isolation for all the Matt Thornton fans out there) with high level guys in each discipline (WBA boxing champs for boxing, Canadian National Team for wrestling, not sure about the kickboxing and BJJ though) regularly and then works out with Jackson and the gang in New Mexico (although I heard for this fight, they went up to Canada) to put it all together as a part of the pre-fight training camp. This is based on what he himself has said he does as well as video packages of him doing it. Hope this helps.
