Just a note: That technique is much better employed against a pushing collar grab than against a strike - either applying pressure to their hyperextended elbow, or sharpening the angle of their elbow joint if they keep it bent. The latter is a good setup for taking them to the ground by whacking them in the throat with a knifehand or by putting your hand over their face and forcing their head back while tripping their feet up. The former can be transitioned into an elbow lock/arm bar if you're quick enough.
