Sakuraba vs The gracies we're all pretty entertaining..
Sakuraba has been in a few of my favourite fights. Anyone remeber UFC'S Ultimate Japan tournamant?
The tournament was intended for heavyweights, and Sakuraba, at 183 pounds, was nearly twenty pounds beneath the UFC's 200 pound designation for the weight class. Reporting himself as 203 pounds in order to gain entry, Sakuraba was paired off against the 250 lb Brazilian Jiu Jitsu blackbelt Silveira.
I remember they actually fought twice in the tournament (for some reason) they were both good fights. -

cro cop vs big nog would probably be the one i show to people new to MMA. It was technical, exciting, loads of punches and kicks to the face, and had a rocky-esque come from behind victory to it. Furthermore, it shows the exploits of a quick, clean ground game. Won't have to worry about new people complaining about somebody just "lying" on top of the other guy.
I have to mention Tyson griffin vs Guida though as a close second (the only reason being that it went to decision, and a controversial one at that). -
