Relson Gracie Jiujitsu. It's run by Phil Cardella, who is a professional MMA figther and Jiujitsu Blackbelt.

From campus, take the 29 bus. It should make a stop in front of Jester around 4:40pm and 5:20 pm. Stay on it until it stops at Manchaca and Lamar. Walk Manchaca heading east until you see the Relson Gracie Jiujitsu sign. There should be a 1/2 price books nearby. Takes like about 40 minutes to get there though. Not from Manchaca to Phil's but rather the whole trip in total takes 40 minutes.

In school, you also have the UT judo team. It is open to both students and non-students. Non students do have to sign up with rec-sports to get inside. The Judo team is well respected and does very well in competitions.

The UT Jiujitsu team is barely starting up, but it has some good people in there. They have open mat on fridays from 2-4.

Honestly, if you want to meet up somewhere in campus, I could take you to Phil's place. Also, you could come to Judo practice if you're interested.

Wherever you end up you may want to supplement with the Ultra-cheap UT judo club. It's $35 a semester, they do newaza every single class, meet mon-wed-fri, and have an assistant Olympic coach teaching the class.

You should also contact Frank Benn. His gym is quite close to your location. I myself do not train there, but I have trained with a few guys who have.

Thanks for all the replies guys. the gracie school sounds pretty good. 1bad65, what did you think of the people from ifa that you trained with? That one would be the most convenient but the gracie academy looks like it would be better. Munacra you go to UT? That's awesome. What year are you? I'm a freshman, I took kung fu for a while back at home but I'm more interesrted in MMA now. Do you have an aim or facebook i could contact you at?

Groundwork or rolling. I was indicating that the UT judo club warms up every session by working submission on the ground. So if you're going to a school with subgrappling or BJJ, you'll get a chance to work your skills against a wide variety of people. This is a large part of why I think that whatever else you take, you should probably ALSO take judo at UT.

I hear the BJJ club at UT is also pretty good... I have a friend who recently graduated from UT this past spring who was a member for a few years. There's also an MMA club at UT, but I don't know much about it. I'd recommend checking those out as well as the Judo club and the Relson Gracie school. If you're particularly budget-conscious, the school clubs would be your best option.
