I think Native americans had a system for teaching its younger folks on how to fight, hunt, be a man within the tribe. I had thought wrestling was part of some tribes. I doubt there is anyone or at least more than a few that would have that much knowledge. Everything I have read leads me to believe some of the Native American tribes developed with the times, buying guns, modifiying those guns to be better suited for shooting from horse. The History channel had something on the tech of the old west which included modifications some Native American tribes put in place for guns and their mobility.
Back to your question, sorry I do not know anyone. I had a friend that disappeared a few years ago (JD Clark III) that had some knowledge but what he learned was mixed with other stuff.

According to one Indian guy I knew (can't remember the tribe) they wrestled, but it was more learn-by-doing than it was a traditional taught skill.
According to legend, that's how Indians earned the gift of maize (corn). A brave wrestled with a god for three days and three nights before pinning him, and was given the gift to help his tribe through a famine.
