Eat LOTS fresh vegetables. Sorry, it has to happen. Preferably raw. Peppers (red or green), carrots, tomatoes (though not technically a vegetable... these are okay to eat processed b/c of lycopene stuff and whatever else), and even broccoli or peas (they're nasty-tasting uncooked but them's the breaks...). Also, steaming vegetables leaches nutrients out, so if you're a ***** and must cook your veggies, sauté them with grapeseed oil and garlic instead, maybe with a little steaming at the end (they taste really good this way and still keep a majority of the benefits). It's okay in soups, though, because you eat the broth in which the good stuff is now dissolved, so you get the nutrients, just not from the vegetable itself.
Your diet seems okay other than that. If you're looking to add calories, you could drink more milk or something. Or just eat more per meal, because 5 a day is probably enough. -

CNagy, I know you hate veggies, but... you can't go wrong with micronuked brocolli, tofu and/or lean turkey "ham" (Publix has a nice one with moderate sodium), and egg whites. A protein shake can do the trick - I'd recommend either "Extreme Body RTD 50" by America BodyBuilding (ABB), "Micell Edge RTD 50" by Iron-Tek or Syntha-6 by BSN mixed with soy milk. Another good shake is Isopure by Nature Best, but some people, the taste is not as good as the other options just mentioned.

I'd avoid a large quantity of fruits at night.
