Chicken and pork are more healthful than beef because they're lower in fat, and, incidentally, flavor.

Thanks, I've added a little bit of ordinary whey protein when I am not getting enough. I find it is easy to take in 30-35% or more of daily calories in protein. I haven't heard of some of those supplements, but I'll check them out.
The shoulder thing is just a temporary problem, I hope. I think I have it figured out and I'm just sticking to rehab exercises... some using theraband.
If I lose fat and no muscle I should be 150-155. I really don't care about a six-pack. I just want to have good strength to weight for climbing and not be in a weight class where everyone is way stronger than me.
...oh, and not be too flabtacular.
