Just roll with them like you'd roll with any other person. If you are dominating the person you're rolling with, take advantage by trying some moves that you want to work on. If you are being dominated, you get to learn how to defend better. Their gender should not matter, always try to learn something every time you roll. Help your partner if they do something really silly as well.

i too get a bit confused at times
some girls like to mix it up and get offended if you go easy (these girls are great to roll with)
other girls look like they are going to burst into tears if you put them in an uncomfortable postion (these girls are not so fun to roll with)
i generally play nice and just work sweeps or something that doesnt cause mad bruises until i work out what kind of girl i'm rolling with -

In general, I try to avoid just out-muscling anyone that I am substantially stronger than, regardless of gender. Sure you could crank them into a keylock. But what's the point in practicing that if you won't be able to do that against someone your own size or bigger? It's fine to make them aware of your strength occasionally so that they realize when they are terribly vulnerable, but try to avoid just being a bruiser.
Other than the general strength thing, there shouldn't be much difference in how you roll. They are not training in martial arts just to have guys be nice to them. In my club, the ladies usually get really pissed if you go easy on them. But we've got some cool chicks... -

theres a girl in my class who weighs like 30kg. so to takedown you just lean to the side a bit, and to sweep you turn your hips a bit. I feel like an arse going too easy on her, so I put her in a firemans carry and dropped her, but then I felt like more of an arse, so I just go easy on her instead.
