Style: Judo/BJJ--
A choke works by cutting off oxygen to the brain by closing off the carotid arteries which supply oxygenated blood. Unconsciousness comes quite quickly (on the order of seconds). If the choke is held for a long time, it will cause brain damage and eventually death, since brain cells require oxygen to function.
That being said, I have been doing judo for years, and nobody has ever died. Mostly because people tap, and we don't hold on to chokes very long. -

With most good chokes, the blood flow to the brain is cut off, so they'd probably be lethal much more quickly. I don't know exactly how long it'd take, but definitely much less to than three minutes to kill someone.
