You can always just use your last name, ie. Fisher Academy

I agree with Choke, your primary style seems to be JKD and to my knowledge its sposed to be a 'take what is useful' martial art anyway. Just call it "insert your name here" JKD. Unless there are legal issues.
Where I live there is a style of Kung Fu that is kind of seperate from the normal channels (the site is not of the highest quality):
Bac Fu Do
I attended a class once (and one of my friends attends the classes) and the instructor is very good (there are couple of articles about him linked on the site). Im just siteing this as an example to you to look at if you plan on setting up your own school.

Just call it fighting and then you don't limit yourself to any style or organisation.
