Apologies if soemone has posted this advice already, but I would suggest a solid cane/walking pole over a knife - far less rigmarole and in the hands of a neophyte it will probably be more use
yes, but everyone you see in america with a solid cane/walking pole is a hippy wanker and thus more likely to be pulled over.
but there is nothing to be charged with when they do so! (except in Texas where I believe being a hippy still carries a death sentence....)
Seriously. Everyone I've ever seen hiking with an actual walking stick or staff was some sort of neo-pagan wank job.
Get one of these, hell I might get one!
Fire starter and 3" pocket knife with emergency signal whistle. Obviously a tool.

Again I bring up situations in a car. Using a cane in a vehicle to defend yourself will prove very difficult.
On a different but related topic, does anyone know, or know where I can find, information about carrying a knife in spain?
Don't, unless it's a small pocket knife. As an amercian your immense size, lunacy, and right wing politics will be sufficient to pacify all but the most crazy of spaniards.

Oh. That's right. You're one of them people. With your flapping heads.
