Freddy, this is true. However, in my experience most of the Latosa Escrima guys have big smiles on thier faces when they know the guy they are sparring is from a WT background.(I know I do <img src=icon_smile_big.gif border=0 align=middle>)
The problems with mixing them are many. Escrima concentrates on forward energy, WT concentrates on leaning back, weight primarily on the rear foot.
Escrima concentrates on a tight high guard, using the offline to get in the best position to strike your attacker. WT concentrates on closing distance with chain punches, and they generally extend their arms in a "kung fu" manner, where as the Escrima "stance" is closer to a Muay Thai guard only higher.
I do think that WT can teach a lot about utilising the elbows, kicks at close range. But beyond that I prefer the Escrima techniques alone (although I admit to being bias). The really nice thing about most WT fighters is they are all trained the same way with little room for deviation. They keep their chins high, head back and almost always step in with a waits height front kick, plant the foot then use a forward strike with the stick. 90% of the time they will open with that combination of attacks.
Being preduictable will get you killed/hurt. And I'm more than happy to educate them. <img src=icon_smile_tongue.gif border=0 align=middle>
All of that being said I have seen a few higher level WT guys who combine it with Escrima and fight real well. It seems in WT that the pratical kick ass stuff isn't taught until later levels. -

Limb destruction is a principle but not a rule. If you aren't in a position to do it, doesn't mean that you have to.
If you train hard enough in FMA, you're perception of speed will be quicker.
When someone throws a fast punch, flow with in and do what comes to you. Don't try to do for the limb destruction because you were taught that.
If the guy is quick but wide open for something else, don't be stupid; go for the openning with the technique that comes to you.
