I would suggest any kind of isometrics exercise would probably be ideal. There's a ton of literature on that stuff on the net or at your local bookstore. Just look at stuff involving isometrics or dynamic tension exercises.

With button up shirts and slacks the typical dress at my work, I used to wear arm and leg weights under my clothing, just to keep some stress on my muscles during the day.
It's a bitch typing on a keyboard with weights on your wrists, if you do it properly. I'm just glad nobody noticed them, because, admitedly, it was a bit strange. -

I'd say that the two most important fitness considerations at work are posture and looking away from a computer screen from time to time. I have back problems to begin with and slouching at my desk leads me to be a lot stiffer throughout the day. Additionally due to staring at a computer screen for many hours a day I'm actually developing a lazy eye, NOT FUCKING COOL!
Of course this wasn't what you were asking about but sometimes you need to vent.

I try to get up a few times a day, not counting lunch, and walk a few blocks, along with ducking into buildings on campus and climbing some stairs. I also shut my office door and do some stretching. Sitting in the chair all day staring at the screen under the flourescents ruins you. Other than that I have to wait until after 5.
