Given the time your average LEO spends training, that probably just ends up in two dead bodies.

Sadly this is very true. I have been a cop for more than 12 years and a DT instructor for 4, and I have found getting cops to train DT on their own is damn near impossible.

As far as useful for LEO, its fault is it doesn't address the officer drawing his firearm. The best knife defense for LEO techniques I have seen are centered around the cop drawing his gun as quickly and in control as possible.
And regarding LEOs carrying knives, most cops do... but not many carry them in a manner making them easy access in a fight.
