Against untrained fighters in a spontaenous situation....sure if trained well enough. You also have to understand the way supposed "ninjas" trained, pretty intense discipline. Most of those are very common martial art techniques.
In the cage...probably not as well. Mostly because two people start on opposite corners and keep their distance, kicking/punnching range and shooting range. Very different from when someone throws a sucker punch and you might happen to counter it. Trained fighters will react much more different than those guys. -

Vid 1 wasn't bad as far as demos go... either the camera was speeded up or they were doing that at a more realistic pace. Of course, it was probably all scripted and not spontaneous, but the actual techniques looked sensible, for the most part, except the gun thing. That was lame.
Vid 2 was decidedly less good, especially the sword part. That was just atrocious.
As far as taijutsu (NOT ninjutsu) working in an actual fight... it depends on the fighter and how they were trained, not the art.--

The First Vid wasn't half bad. The rolling to evade the sword was solid. The Locks were a bit iffy, espcially that Goja Dori. But I seen way worse. The Ninpo Version of the Rear Naked Choke was done very well.
The second video wasn't Ninjutsu. That was Aikido (not even Jujutsu, note the pretty pretty circles).
