My guess would be that it is a smaller portion of the curriculum, preformed most of the time as static drills (with perhaps the exception of aikido, i remember some unscripted drills) and no real free sparring.

If you want to learn knife defense id go learn from someone who specializes in it, not from a generalist. That STAB program looks interesting. -

There are a few people in the States teaching this, I would highly reccomend Ray's system.
