Style: BJJ - Homeland Security--
Open your guard and sit up, using your hands to push off the ground and bring you upright. You can now either slide your hand through the middle of his arms and go over his shoulder for the hip-heist sweep, or stand up in base while grabbing the back of his head to slam his face into the ground and take the back. The latter is easier with a gi since you can pull down on his collar.
If the guy is just lying on you and trying to do the can opener without sitting up you can break his base and do an elevator sweep (lift one thigh, push the other away). -

Style: MMA, No-Gi Grappling--
Those are all fine if you want to open your guard. But if you are content with your closed guard.... reach with either your left or right arm over both of his arms... grabbing the far bicep. This makes your forehead hit your own forearm, and he is unable to crank your neck.
I use this one a lot because I will use the can openner a lot to open the guards of others, and I dont want people doing the same to me. I usually use an open guard over a closed one anyways, so if I have my guard closed, its for a reason and I want to be there. -
