Who are the performers?
What you show is not technically part of the formal judo curriculum - it's not from the Gokyo or any of the kata. The closest thing to a real judo technique is the takedown - it looks like, but isn't, kani-basami. Most likely, it's just something that somebody made up for a demo.
You're stretching to call it judo knife defense - the actual defenses are quite different. -

Yeah, that move isn't very good, nor do I recognize it in my Kodokan Judo book. I suppose he should've just went for the single leg and then pulled guard on the knife wielder though.

So, from all the historical clips in that hour long - made-for-French-TV - documentary, you chose a 5-second filler to start a thread on.
One, unlike pretty much all the others, has no title or reference information in the voice-over. It looks like is was chosen to add some visual impact to an otherwise simple and visually unappealling commentary by Gailhat on the attraction of judo to scientists.
Good choice. -
