The only RNC defenses I know of so far are putting your own forearm around your head/neck area to block the choke, and then turning into the person while trying to get at least one hook out. From there you can move to top guard or top side control. Unless you're face down; in that case, you're probably pretty screwed.

One way to escape is to get your back to the ground. That neutralizes one hook, as well as the choke. At that point you can try to work for position, biggest thing to look out for is the opponent's top knee, cuz he can just throw it over and mount you. Block that knee with at least one hand, and scoot your hips away. The best thing you'd probably get from escaping the back is him in your guard, or you in his. If you're flat on your face, you have to turtle up and roll. If you're lucky, you'll keep his hooks out and he'll roll without you. If he gets hooks in, you're gonna be in trouble, but at least you're off your face.
