Two schools of thought here.
One is to drop bombs. To do this you want to pin thier head to the ground with one hand holding their neck and punch with the other hand.
The other is to do a lower mount with grapevined legs and throw short hooks. This is obviously the less risky proposition, but the likelyhood of a KO is also diminished proportionally. -

Another question, somewhat related to JKing's. Does anyone machinegun straight right hands from knee on stomach? I always see people posturing as if they're ready to unload a solid straight, with their other hand holding behind the opponent's head. Is it too easy for the guy on bottom to escape if you're concerned with punching?
I'm curious, because I really hate being stuck under knee on stomach, and if it's a great "punching platform", I plan on using it a lot, and making my sparring partner suffer when we start sparring in more of a MMA format.Jaguar's MMA record

Would I be right in assuming the choice between the two has to do largely with any size advantage of the person on top and the bottom person's skill at escaping?

Caveman punches are great too... or hammerfists, whatever you want to call them. It's a more natural movement from that position anyway.
