Well, I was a chef in two restaurants. Aside from that, you should have a general idea when cooking what oil to use. If I use a higher SP oil, I'll cook the food faster, or burn it. Some things take longer/shorter to cook and certain oils need to be used for that reason. Also it comes down to taste and texture. Heavier oils, which I never use anyway, give a different taste, texture, feel to the food etc. It all has to blend well. Or simply..
