but what does Gong Say mean? i've forgotten the names of the hand movements once i memorized them

Well, my Cantonese is horrid, so it probably doesn't quite say what I think it says, but it's along the lines of "talks with hands". :)

You may be thinking of gan sau, or "plow hand", which is the complement of kwan sau. Together they make the "iron curtain" of centreline defense according to WC theory. Both techniques defend/attack the centre with both hands, one for the lower gate and one for the upper. Hope this helps clarify things.
