hey, being vegetarian is fine...if you are doing it for a moral / ethical reason. if you are doing it because you think it is more healthy than eating meat, then you are probably wrong. some people would be healthier if they ate less meat and more fruits and vegetables. actually quite a few would. vegetarianism is great for desk jockeys that think doing yoga once a week is exercise.
but for real athletes, it is quite difficult to recover and get optimum performance without eating meat. like i said, i had nutrition teacher that does full triathalons (no 1/2s)was a vegetarian, but he has a doctorate plus hella experience. and even he admits he would probably do better incorperating some meat.
leave that dietary restriction for people that don't worry about exercise, unless, of course, you do it for a religious or ethical reason.

I like vegatarians. They help lower cost of meat and save more for me.
Regarding the shake affecting you:
The thing that matters is final calorie intake versus calories burnt.
I like Phrost's and TBM's simple suggestions best. Why did the rest of you not say this?

Try for a SLOW weight gain.
Gaining fat is not something to strive for.
Its better to gain 1lb of muscle a month or less than to gain 5 lbs of fat.
Eat all the veggies you like, add chicken if you can ( I assume meat is out of the question).
There are some nice protein shakes you can take, or even make yourself.
Just remember, you wanna gain good weight, not put on fat.

He should be able to do about 8-10 in a month, at the least. Esp at the start of lifting.
