I would say keep in mind that kung fu styles are very influenced by marketing trends. Just when you see something that you think looks effective, you find another instructor doing it as a "bolloxy flower arranging" method. I remember a Wing Chun manual which was sold under the title "How To Develop Chi Power", when it was just the first form!
Often you will find people who were taught by the same master presenting their art in two completely different ways. -

Bong sao means-"wing arm". It is a dflection used in Wing Chun and some other styles I believe.
You deflect the opponent's grab with the elbow; which is lower than the shoulder and higher than the wrist. You are not supposed to make contact very long nor use too much force.
I'm sure someone else here can provide a better explanation. -
