1 I would say these arts you mention tend to lack the skills needed to defend against strikes.
2 Now in self defense situations these arts can be useful if someone un-expectedly grabs you in a particular way and you need to break that hold. (Learning to break out of Head lock, Full Nelson, etc can be quite useful)
3 As for throws it depends on what types of throws and how you are being held. In jujitsu they have there own throws and the appropriate counter moves to deal with various types of throws (now this doesnt mean they are the best at it. Throwing arts like judo and shuai jiao tends to deal with it better).

First primary avoid the strike by dodging like how boxers do it. (Its a simultaneous action with the hand slap and elbow block secondary.)

I think it all depends on ehat you are doing. If you can counter strike...great do it.
But if you are trained in a grappling art I say deflect the strike them move in for a throw/takedown. Thats the only way. This bullshit about blocking punches in mid air,grabbing them and then cranking on a joint lock is nonsense. That stuff does not work.

If he was jabbing at me I would back up and throw snap kicks or my own jabs until he did something more convenient for a lock or hold. Chasing after swift jabs is probably not a good idea[for me as a non shoot fighter]. I personally wouldn't even encircle sabaki style from just a jab as it tends to be too quick[for me] to do much about.

If he's actually jabbing AT you then you shouldn't need to chase after them. Their coming right to you.
