That was against Mark "The Cobra" Hall in UFC 9. The punch was hard to catch live because Kitao got a takedown immediately after. First time viewing years ago, I thought his nose began leaking due to high blood pressure and the force of his own slam rupturing his blood vessels.
Nathan Jones actually commented on the Pride video. He claims Kitao hated physical discomfort and wouldn't allow himself to be struck while choreographing the match. He also says five of the seven fights in Pride 1 were works (Not a stretch to believe).

I just found some of these bizarre shoot-style matches (Bushido) featuring SAMBO expert Chris Dolman, trainer of the likes of Bas Rutten, Gerard Gordeau, and Freek Hamaker from UFC 2.
Vs. Bill Kazmaier, famed powerlifter.
Vs. George Capes, Rugby player.
Interesting character. Freek Hamaker wore the same kind of singlet he did. He also has some RINGS and UWF matches on his channel, but here are some of his shoots:
