    duck under or arm drag, take back, jump up on back get rear naked choke on and hooks in. As fat guy passes out disengage so he does not fall on you.

    Adressing the op because I haven't read most of the thread. I started grappling fat, it's really not hard to get taken down when you have so much extra weight pulling you off balance, I found trips especially effective against me. As for on the ground, do you have any idea how much harder it is to keep up and move on the ground when you're fat? I have seen some pretty big guys doing just fine on the ground but most of them will struggle that's why those of us who stick with grappling and were fat tend to lose weight. If you are fitter and are halfway competent you should manage fine.
