Well, the way you do this is to learn striking or grappling in a way that uses high intensity and aliveness but is also safe. If you have distance, timing and technique skills against a live opponent, then the "dirty" stuff can be added. For example, the jab could be applied with the thumb tip protruding to hit the eye, but only if the guy could already land that jab. Ear strikes, using the concrete etc are things that would work better for the good jiujitsu player who knows how to grapple.
The world is grey IMO not black and white IMO. This is one of those grey areas.
Everything is black if your eyes are gouged out.

I really do want to pressure test but am concerned about getting seriously injured and not being able to work.
This has always been a concern for the martial artist; plenty have worked out methods to train safely while also with aliveness. Others have only worked out how to train safely but without aliveness. Some do neither.

I'd love to see you try to eye gouge someone who does Enshin.

Why would I? Aren't most MA's train to have respect and discipline. I don't think the avg. street thug trains in Enshin. I don't just go for ear slaps or eye gouges straight off, I work them into my Silat SD drills. If you go to sucker punch me I block and step offline and forward in one movement and as I block your punch and pass you I look for closest target. If that's your ear great, eye great, throat sure. I wouldn't discriminate I improvise as best as I can. All I care about is ending the attack as quickly as possible.

Right, because only good people train in Martial Arts. Or, if they were evil when they started, MA's cured them.
