After using knives without a Teflon coating for years and for everything from carving feather sticks at campsites to skinning fish, I have yet to get anything stuck on uncoated steel except for tape and that's going to stick to anything regardless of coating. Coatings are nice if you're using a steel that rusts easily, like 1095. Some coatings, such as bead blasts, will actually interfere with slicing by creating friction as you slice. Other smooth coatings are simply there to minimize shine and glare and are all about preference.
