We'll assume blood counts a lubricated environment. In such an environment steel has a friction coefficient of 0.16 and teflon has a friction coefficient of 0.04. What this means is that force against the forward movement due to friction on a teflon coated surface is four times less than untreated steel.
Now really... the force opposing the movement of the knife due to friction is pretty much negligible. Even with untreated steel. -

Just say no to teflon. As pointed out by mike321, it scratches off easily.
Additionally, if you're like me, you keep a keen edge on your knives. You don't want teflon loading up you sharpening stones/hones.
Who cares about 'twitching'? If you want to do some real damage you're going to pierce, twist and pull on the way out. Bone obstruction is another matter.
I know it sounds kind of evil, but we're taking life or death situations. -
