I teach Pressure Point Control Tactics and Dynamic Control Systems basic modules. PPCT employs limited weapon retention techniques, and Dynamic Control Systems is a little harder to grasp.
Most everyone I work with, except me, has a Level 3 retention holster. I am also a range officer, and do not like the twisting, pushing and pulling. I use a holster with no added safety features; if this is my undoing, then so be it. I prefer to rely on my spidey senses for situational awareness, and if that doesn't work, my weapon retention tactics.

What does this mean? Do you retain your weapon and arrest him for attempted murder or do you cap the ************? Do you just restrain him or do you blow 4 in him? Do you just go with the calm down ************ route, or do you put more lead in him than an old car battery junkyard?

You are asking a lot of questions that cannot be answered...do I restrain and arrest him??? I don't know...will I be able to? Do I try to "calm him down"?? While we are wrestling for my gun? Do I retain my weapon? Id sure as hell would like to....if the guy is twice my size and ground and pounding me do you think that retention is a choice I have?
Reality is a clusterfuck...not an option menu.
Attempting to disarm a cop is a deadly force situation...there is no cookie cutter answer for you. If I reasonably believe that someone is actively trying to disarm me he is likely to get shot. Assuming I CAN shoot him.

Once again, I think I missed the jest of the op's question. tgace is EXACTLY right here; there is no static solution to a dynamic problem. The "I will respond accordingly" applies and is the best answer.
I initially believed the op was asking for specific techniques that would work in certain instances.
