8 Years later I have Teh Real Krav Maga

Your cousin must be studying Krav Maga from the Land of Unicorns and Rainbows (tm) as opposed to the Krav Maga from the real world. My Krav Maga instructor's advise when dealing with knives is to give the mugger money to buy some crack, if that is enough to avoid a knife fight. Running can work too, if you can see the attack coming from far enough.

Krav Maga comes in where you cannot avoid the fight - and then it does not matter if you an Expert - you are facing non-negligible chances of injury or death.

So either your cousin, or his instructor, or both, are on crack and should not be trusted with anything more dangerous than a spork.

Perhaps your cousin misunderstood an important point.

What my Krav Maga instructor does point out repeatedly when teaching defense against knives - just because you are stabbed, does not mean you should stop fighting. Cause if you stop fighting, you are dead for sure. If you don't stop, maybe you will live.

So once you are in fight - if giving the guy his crack money did not help - and running away was not an option - you should not be afraid of the knife, not even if you are stabbed.
