my diet is very complicated which is why I didn't say much about it when I first made this thread, I am not supposed to eat protein, less than half a normal persons protein intake from a day is pushing it for me.
Therefore I have to eat a lot of vegtables and carbs and fruits.
Unfortunately I also snack, which is bad I need to cut that out.
Today I had some baked tater tots for breakfast, a big mr. freeze freezie, four chips ahoy cookies, a handful of ms. vickies chips and I am going to have Pad thai for dinner. In terms of water I've had about 5 cups full.
I'm not sure how typical that is, usually I snack less than that, sometimes I snack more, usually I eat lunch as well, today I didn't feel like eating lunch so I just ate an assortment of random unhealthy snacks which probably wasn't the best idea.
I think in terms of calories it's about the same though. -

It might also be worth mentioning that it isn't super helpful to weigh oneself daily. Our weight tends to fluctuate throughout the day depending on when you eat time of day etc, and can fluctuate a little bit from day to do. Best practice from what I'm told is to weigh once or twice per week at a consistent time of day so you can note any significant changes.

You have to look at more factors than your height and weight alone. Body fat percentage is one, BMI is another, how do you carry the weight, and the most important thing is How Do You Feel?
To add to this fact, everything that you put into your body either helps you or harms you. There are actually some tards out there that believe if you take some kind of pill, you will lose weight and get ripped. One example:

Don't let the scale run your fitness plan; it comes down to nutrition, exercise, rest.
If it has Tires or Tits, expect problems.

Your diet is really a train-wreck (at least if your intake today is typical) but so was mine a few years ago. I was 230ish and now Im 167. My BF is below 10%. I eat the same way 6 days a week and on day 7 I eat what I want. I gave up bread and pasta, nuts, and dairy. I eat all meats except pork and any and all veggies, rice, potatoes, yams (etc etc). I cut out sugers and alcohol. I eat as much fruit as I want. I don't miss the other stuff. I got rid of processed stuff. Its not magic. Its simple really. One day a week I indulge my need for beer or McDonalds or whatever and that satisfies the craving's. My one little tiny exception is a little cream and splenda in my coffee. There is no magic bullet or pill and I have literally tried them all. NO PROCESSED FOOD. WHOLE FOOD. Its that easy.
By the way I went from 230 to 185 and held 185 for about 2 years. Its when I dropped the milk, yogurt, Peanut Butter (natural) cottage cheese, that I lost all the additional weight. Anyway if you have questions I am more than willing to answer. -

I have PKU so I'm not supposed to eat much protein.
It's only mild though so luckily I don't have to eat special low protein foods like most.
The only things I can eat with impunity according to my diet are certain vegetables (IE not beans/corn etc) and fruit.
Because of this there isn't really much I can eat that aren't simple carbs
I'm not sure what you mean by processed food, my sodium intake isn't bad.
I think my problem is I'm used to eating a lot.
I need to find a way to replace those simple carbs I always eat with fruit or something. -

you need to talk to a specialist about your unique diet problems, but, if you stay more active during the day it is going to make a differense. You said you work in an office, two things, 1. buy a rubbery stratchy band so you can do a zillion drills with it while sitting at your desk and reading. 2. every hour or hour and a half (put a reminder in your phone) get up, and climb quickly a few stories in your building, it shouldn't take more than 4 minutes and you should get a little out of breath. This will jolt your metabolism a little. if you do it every day you work, you will see a difference after a while. (forget that an elevator exists!!)

By processed food I meant the chips/cookies etc you mentioned in your post. I suspect that they contain corn syrup which is really bad for you as well as probably having any goodness removed. Try eating more fruit/veg etc.
A couple of good points have been made about things to do at work to exercise yourself.
Couple of questions for you
How far do you live from work? Could you cycle?
Does your work have a shower? Might make cycling easier.
Do you get a lunch break? In which case why don't you go for a 20 minute jog?
