Although not technically a Martial Arts show, Last Man Standing does have some Martial Arts in it. Bascially its about a group of athletic individuals travelling around the globe to take part in different tribal or traditional sports. Whoever physically outperforms the rest in the most challenges is declared the winner.

They made two series with guys and then a female only series.

There's about 15 seasons of TUF you could watch in the meantime :p.

Now, it's not a live action but Hajime No Ippo is a pretty awesome boxing anime. No real bullshit stuff in it, pretty cool following this tiny guy as he trains and fights his way to the top. I found it really motivating when I was starting training, heh. But could obviously not be your thing.

Then you have the over the top bollocks - Grappler Baki and Tough are the only two I've read/watched.
Daniel: I don't know if I know enough karate.

    Miyagi: Feeling correct.

Daniel: You sure know how to make a guy feel confident.

Miyagi: You trust the quality of what you know, not quantity.

I second Fight Quest. The hosts are usually very level-headed as well.

In terms of Game of Thrones:
I hear that. I've read them all. Normally I hate TV adaptations of books because the people never match what I imagined. But Tyrion and Tywin were exactly who I imagined. Although I imagined Ned as Duke Leto Atreides when I read it, so SeanBeanAndGone was surprising.
I have nothing more to add to the original topic, but would like to point out this:
